Our Story

From Lizzie & the Bees

Small-batch raw honey, raised by hand in Weeki Wachee, Florida.

Daisy Chain Apiary began the way most good things do — with a little curiosity and a lot of bees. What started as a few hives on our land in Weeki Wachee has grown into a small apiary devoted to one simple idea: honey is best when it's left as close to the way the bees made it as possible.

The name is a nod to Lizzie — painter, partner, and the one whose eye shapes everything from our labels to the jars on the shelf. "From Lizzie & the Bees" isn't just a tagline; it's how this whole thing feels. A small family operation where every batch passes through our own hands.

What "raw" really means

Most honey on grocery shelves is heated and ultra-filtered until it's clear, shelf-stable, and stripped of the very things that make honey special. We don't do that. Our honey is never heated above hive temperature, so the natural enzymes, pollen, and aromatics stay right where they belong. It might crystallize over time — that's not a flaw, it's a sign you're holding the real thing.

Single-source & seasonal

Every jar comes from our own hives — never blended with honey from anywhere else. That means the color and flavor shift with the seasons and whatever's blooming nearby. Spring honey tastes nothing like late summer honey, and we love that. It also means quantities are limited. When a harvest sells out, it's gone until the bees make more.
